Doc’s Mother’s Whole Wheat Pancake Mix

20 cups whole wheat flour
3⁄4 cup double acting baking powder
3 teaspoons salt
2 Tablespoons cream of tarter
1⁄2 cup sugar (optional)
4 cups shortening or oil (add oil when making)
2 1⁄2 cups powdered milk (can leave this out and just add milk to the mix instead of water)

Mix well and store in a tight container in the refrigerator or freezer.
To prepare pancakes:

Mix together:
1 cup pancake mix (from above)
1 egg
1 cup water (or milk)
(1 Tablespoon oil if shortening is not added to the mix)
