Refrigerator Orange Rolls
The recipe Doc’s mother used including her glaze recipe. These are Yummy!

FYI….the ( ) contain mother’s adjustment to the recipe she got from a friend. Try it both ways and find what you like best.

2 yeast cakes, dissolved in ¼ cup warm water (1 tbl)
3 eggs, beaten (1 egg)
½ cup sugar
2 tsp salt
½ cup melted shortening
4 ½ cup flour (4 cups)
1 cup warm water (milk)

Mix together yeast, eggs, sugar, salt, shortening , and water. Gradually add flour and mix. Let rise until double in blk. Mix down with spoon. Place in refrigerator overnight, covered. Three hours before baking roll out dough. Roll out in rectangle. Spread with this mixture:

½ square melted butter, ½ cup sugar, and grated rind of 1 orange.

Roll up like cinnamon rolls. Cut in 1 inch slices. Place in greased muffin tins. Let rise (double). Bake for 7 to 10 minutes at 400 degrees. (10-12? until starting to brown.) Makes 24 rolls.

Glaze: (Doc’s Mother’s hand written recipe)
Juice an orange (start with ½). Mix powdered sugar into the juice until a little thick, but not as thick as frosting. Pour glaze over rolls when they come out of oven.
